Seafood Processing Technician (Surimi and Roe) – Bering Sea

Nissui USA is filling a seasonal seafood processing technician post in the North Pacific and Bering Sea from January 1 to April 20, 2027, covering the winter pollock season. The technician runs pollock and hake surimi production on their own: sizing fish, setting cutting machines, separating, rinsing and refining meat, mixing additives, and removing pollock roe with specialized machines, along with quality testing at every step, food safety and sanitation, and training other workers. Applicants need 24 months of surimi and pollock roe processing experience, verifiable on the application, and must be able to hit product specs from varying raw fish. The schedule is up to 72 hours a week, 12-hour days Monday through Saturday, with a 35-hour weekly minimum depending on fish. Pay is $21.31 an hour with $31.97 overtime, plus health insurance and a possible bonus, and lodging is provided. Apply through the Alaska Job Center Network as listed on the federal job order.
