Processors rotate through butchering, sorting, filleting, case-up and plant cleanup, with shifts of 12 or more hours, seven days a week when fish are coming in, and no guaranteed hours during slow stretches. You get yourself to the Seattle point of hire; the company flies you from Seattle to Dutch Harbor.
